Carob Chips
Do you have a healthy recipe for carob chips?

Sally Fallon has a recipe for healthy carob chips in her excellent book, Nourishing Traditions. I've adapted it below. (I don't, incidentally, recommend purchased carob chips which use chemically fractionated palm kernel oil.)
3/4 cup carob powder
1/4 cup natural sugar (I recommend Rapadura)
1 cup coconut oil
1 tablespoon vanilla
1 tabalespoon powdered instant non-caffine "coffee" like Pero or Postum
1/4 teaspoon cinnamon
Place all the ingredients in a glass container and set in simmering water until the oil is melted. Mix together, spread on a buttered cookie sheet and then chill in the refrigerator. When hardened, place in a food processor and pulse 3 times or until coarsely chipped. Store chips in an airtight container, refrigerated.
