Broiled Peaches with Goji Berry Sauce

Broiling lush peaches heightens their flavor, lightly crisps their outside and seals in their juice. Splash them with a quick goji berry sauce. These tasty fruits boast the highest source of anti-oxidants. If you can't find goji berries, substitute with currants or raisins.

Serves 4

2 tablespoons goji berries
1 cup fruit juice (or 1 cup water and ¼ cup honey)
1 tablespoon tapioca flour
¼ teaspoon grated orange zest
2 teaspoons pure vanilla
4 cups of ripe peaches (or nectarines, pears or apples), peeled, cored or pitted and sliced
Freshly grated nutmeg, garnish

Place tapioca and juice in a small sauce pan and stir to dissolve. Add berries and orange zest and, while stirring, bring to a boil and then simmer for one minute or until thickened. Stir in vanilla and set aside.

Arrange fruit on a ceramic or metal pan (Pyrex is not safe). Place under the broiler and broil for about 4 minutes or until the fruit just starts to turn a shade darker. Turn and broil for another minute. Watch closely.

Divide between 4 individual dessert saucers. Top with goji berry sauce. Garnish with nutmeg and serve.
