Horseradish Spread

Accompanying article: Horseradish

Makes about ¼ cup

¼ cup tahini or 1/2 stick unsalted butter, room temperature
2 tablespoons freshly grated horseradish
1 tablespoon minced herb of choice
1 tablespoon edible flower blossoms, like calendula, lilac or lavender (optional)
1 teaspoon prepared mustard
1 tablespoon fresh lemon juice
½ teaspoon sea salt

Mix the ingredients in a small bowl.  Use as a spread on crackers, toast or bread. (Or, when using butter, place mixture on waxed paper, roll into a log shape, chill until firm and slice into thin rounds for serving.)  Store, tightly covered, in the refrigerator.
