Mermaid Nut Mix

The combination of crunchy nuts, moist dried fruits and the mild tang of seaweed (nori or dulse flakes) make this an extraordinarily satisfying and nutrient-dense treat.

Note:  rancid nuts are not good for you. Purchase whole raw nuts (rather than nut pieces) from a retailer who has a speedy turn-over. Do not use nuts that taste old, stale or rancid.

Yield:  5 cups

3 cups lightly toasted, organic nuts and seeds such as almonds, walnuts, Brazil nuts, hazelnuts or cashews, or sunflower or pumpkin seeds
½ cup organic currants or raisins
½ cup chopped organic dried fruit such as apples, pears, mangos, cherries or figs
2 sheets nori seaweed, cut or torn into bite-sized pieces or ½ cup dulse flakes

Mix all ingredients together and refrigerate in a covered container until use.
