Sweetly Simmered Cabbage

Serves 2.
1 2-inch strip kombu seaweed or 1 bay leaf
1 teaspoon minced fresh ginger
1 onion, cut in chunks
1 carrot, cut in chunks
1 small daikon or 1 turnip, rutabaga or kohlrabi
3 cups chopped green cabbage
Sea salt
1/4 cup cilantro
Place kombu (or bay leaf) and ginger in a medium-size sauce pan and add water to cover the bottom of the pot by 1/3 inch. Add the onion, carrots, daikon, cabbage and salt. Bring to a boil, cover, reduce heat to medium and simmer for 15 minutes or until the vegetables are well cooked. Add additional water if necessary. Remove and discard kombu (or bay leaf). Stir in cilantro. Place vegetables in a serving bowl.
