Maple Sunflower Candy

For your pleasure, here's a nearly instant healthy and yummy candy.  It's my favorite quick treat.

From start to finish, this satisfying candy takes 5 minutes to make. Wrapped tightly, it stays fresh for several weeks and it packs well for lunch. Great for kids of all ages.

Makes twelve 2-inch square candies

1/3 cup pure maple syrup or honey
2/3 cup raw sunflower seeds

Place syrup in a quart saucepan and bring to a boil. Reduce heat and simmer, uncovered, for about 5 minutes. Initially the syrup will be bubbly and frothy, however as the water evaporates, it becomes more dense. When it becomes one shade darker around the edges (244ºF on a candy thermometer), remove from the heat.

While the candy is cooking, place seeds in a wok or a stainless steel pan over high heat and toast, stirring constantly, for about 3 minutes or until they just start to turn a shade darker in color. Remove from the heat.

Pour toasted seeds into the candy. Stir to mix thoroughly. Using a spatula, scrape onto a flat dinner plate and flatten to uniform thickness. Allow to partially cool. Cut into 2-inch squares.

Variations:
Substitute popcorn, roasted peanuts or almonds for the seeds.
